Mocotó (tripe recipe from Brazil)


1 pound of beef tripe
2 pounds of cow’s feet
3 sausages
4 eggs
1/3 pound of green olives
1/2 pound of white beans
1 onion
1 clove of garlic
1 teaspoon of hot chili sauce
Olive oil
Lime juice


Wash the tripe and the cow’s feet in abundant water with lime juice, then cook it for approximately 3 hours until tender. Cut the cow’s feet meat, the tripe, and the sausages into small pieces, then sautée in olive oil with chopped onions and garlic for approximately 15 minutes. When the onions are transparent, add the white beans and continue to cook until they are soft. Finally, add some hot chili sauce, and serve it very hot, garnished with green olives, chopped parsley and boiled eggs.
