Kirsha bi-l-khudar (tripe recipe from Egypt)


2-1/4 pounds tripe
3 carrots, diced
2 potatoes, diced
1 cup peas, shelled
3 zucchini, finely chopped
1/2 cup celery, chopped


Cut tripe into narrow strips. Boil for 5 minutes, then throw away water. Return to flame with all the vegetables and cook over very low flame, with enough salted water to barely cover, for 3 hours. Add more warm water in small amounts when necessary. Dress with pepper before serving.
