Russian tripe soup (tripe recipe from Russia)


800 grams of tripe
2 eggs
Parsley leaves


Cover tripe with cold water in a pot and cook, without salting. Drain, cover tripe with fresh water and cook until done. Cut cooked tripe into small pieces and strain broth. Return tripe into the strained broth and return to boil. Beat egg yolks in a bowl until combined, add vinegar to the egg yolks, mix well, pour beaten egg yolks into the soup, return to boil and remove pot from the heat to avoid curdling of egg yolks. Just before serving sprinkle the soup with chopped parsley, serve chopped garlic and salt on the side.
