Directions

To prepare dried tripe, slowly boil it on low heat. When it is cooked, drain it and cut it up into strips. Put the strips on a reed mat, calledd mphasa, draped over a stool or stand and leave in the sun to dry for two or three days. Just as with vegetable mfutso, make sure that the tripe has completely dried out. To cook, simply blanch your dried tripe in salted boiling water and prepare it as you normally would fresh tripe.
