Matooke (tripe recipe from Uganda)

Ingredients

8 plantains or green bananas, peeled and diced
1 onion, chopped
1 bell pepper, chopped
4 cloves of garlic, minced
4 chile peppers, chopped
1 tbsp ground coriander
2 tomatoes, seeded and chopped
2 cups beef stock
1 lemon, juice only
3 tbsp oil
1/2 cup of peanuts, finely chopped
Salt

Directions

Toss the plantains with the lemon juice and set aside. Heat the oil in a large pot over medium-high flame. Add the onions and bell pepper and sautee until the onion is cooked through and translucent, about 3 or 4 minutes. Add the garlic, chile peppers and coriander and sautee for another minute or so. Stir in the tripe and the tomatoes and cook for another 2 or 3 minutes. Add the beef stock and season with salt. Bring to a boil, then reduce heat to medium-low, cover and simmer for about 20 minutes. Stir in the plantains and simmer for another 30 to 40 minutes, or until the tripe is tender and the plantains have softened. Stir in 1/2 cup of finely chopped peanuts during the last 5 minutes of cooking. Adjust seasoning and serve hot.
